Made this for my beautiful Italian friend/workmate who is celebrating her birthday today. I call it "bellisima" because the word simply describes her and how pretty she is.
She loves red velvet and the cream cheese frosting that goes well with it. So in making her cake, I used red velvet instead of the usual chocolate mud. For the filling and crumbed coating, cream cheese was much more handy than I thought it would be.
